These easy almond flour peanut butter cookies are gluten free, vegan and refined sugar free. The perfect healthy treat for an afternoon snack or dessert!

In a bowl combine the peanut butter, maple syrup, and vanilla extract until well blended and smooth.

Add almond flour and baking powder until a cookie dough forms.

Divide the dough into 10 parts, roll it into balls and place them on a lined baking sheet in a single layer

Flatten them with the back of the fork to form a classic crisscross pattern on the top of the cookie.

Bake for 8 minutes or until golden brown.
- Let them cool for 10 minutes on the baking sheet before transferring them to a wire rack to finish cooling. - If you want to keep the fork from getting stuck in your cookie dough, moisten it first!
