Dal tadka is a simple Indian lentil curry tempered with spices and herbs. This staple is common in almost every Indian household and packed with protein. Serve with flatbread or rice!

Clean lentils and add to a pot of water. Boil for 30 - 45 minutes. Set aside.

Heat oil in pan. Add cumin seeds and toast them quickly. Fry onions and green chili peppers

Add the chopped tomatoes, and other spices. Mix well and fry until soft.

Add cooked lentils. Let it cook on a simmer for 3 to 5 minutes.

Heat the oil. Add mustard seeds, cumin seeds and red chili powder. Saute together and set aside.

Add the tadka on top the cooked dal, and mix well. Garnish with fresh cilantro and serve hot.
- Soaking the lentils before cooking will help them to cook more quickly and evenly. - Be sure to use a good quality garam masala and turmeric powder.
