Cook sweet potatoes until fork-tender. Drain and set aside. Remove and discard the skin then roughly chop.

In a small saucepan, combine quinoa and water. Boil and simmer until all the water is absorbed. Set aside.

Combine the cooled sweet potatoes, cooked quinoa and other ingredients. Mix well.

Measure out ½ cup of the mixture. Gently shape it into patties. Flatten the burgers and smooth out any uneven edges.

Brush both sides of each patty with olive oil. Bake for about 35 minutes. Flip halfway.
