Heat oil in skillet. Sauté onion and garlic for 30 seconds until fragrant. Add bell peppers and saute until cooked through.

Add Jamaican jerk seasoning and coconut cream. Stir. Add vegetable stock and cook for 3 minutes.

Add the hard cheese, followed immediately by the cooked pasta.

Allow the pasta to cook more with the sauce for about 3 minutes. Add pasta water to adjust the sauce.
