Fried Rice

Versatile, uses leftover rice, "fridge" veggies

Step 1

Sauté jalapeño peppers, cabbage, and mushrooms (and any other fresh vegetables) in hot oil until cooked and golden brown (about 5 minutes).

Step 2

Add minced garlic and ginger paste and sauté for 30 seconds until fragrant

Step 3

Whisk eggs or Just Egg (if vegan) in a glass and pour into the skillet, cooking for 1-2 minutes until they barely start coming together.

Step 4

Add day-old rice and stir so  egg sticks to  rice as it cooks ( ~3 mins).  Check out tips below for types of rice, and troubleshooting!

Step 5

Add frozen vegetables along with soy sauce, sesame oil, salt and pepper and mix well to combine.

Step 6

Take off heat, add remaining soy sauce, garnish with green onions, serve hot!
