Heat oil in skillet. Saute onions, tomatoes, and garlic. Add a pinch of salt.

Add the ginger paste to the skillet and toss to coat. Turn down the heat.

Add cumin, cardamom, red chili powder and water. Allow it to simmer.

Add the chopped collard greens or kale to the skillet in small increments. Mix together, and increase the heat.

Season with salt and add jalapeños. Cook for another 5 minutes. Serve hot!
