Green Rice Casserole

This green rice casserole is simple, easy to make, and loaded with flavorful ingredients. Plus, it's perfect for busy weeknights since it's ready in under 35 minutes!

What you Need

Saute aromatics


Heat oil in skillet.  Add minced garlic, scallions, and green chiles and cook for 2 minutes. Reserve.

Add kale


Add chopped kale and chopped fresh spinach to wilt over medium heat.

Prepare rice


In a bowl, combine cooked rice, cheese, sour cream and sauteed garlic, scallions and chiles.

Transfer to casserole


Transfer the mixture to a casserole. Sprinkle remaining cheese evenly over the top.



Bake until cheese is golden and melted. Remove from the oven and let it rest. Serve hot and enjoy!
