Heat Instant Pot. Add olive oil and onions with a pinch of salt. Cook for about 3 minutes.

Add the carrots, celery, and garlic and cook for another 3 minutes.

Add tomatoes and stir well. Add water or vegetable broth, then add potatoes, salt, and Italian seasoning. Stir.

Cook on high pressure for 8 minutes. Release pressure. Add cannellini beans. Close lid for about 2 to 3 minutes.

Stir in the spinach until wilted, and remove the bay leaves.

Taste and adjust the seasoning if needed. Serve hot.
