This authentic vegan stew, ready in just under an hour, has yellow split peas simmered with fragrant turmeric, garlic, and ginger. Just because it's simple doesn't mean it doesn't pack a punch!

Rinse the yellow split peas under cold water. Soak them for about an hour before cooking.

In a pot, add split peas and water. Bring to a boil, then reduce to a simmer. Cook for about 35-45 minutes.

Heat olive oil in a skillet. Add onion, and sauté. Add garlic and ginger, and continue to sauté for 2 minutes.

Stir in the turmeric and cook for another minute.

Add sautéed onion, garlic, and ginger mixture to the cooked split peas. Add salt to taste. Simmer for 10-15 minutes.

Adjust the seasoning if necessary, and then turn off the heat.
