Quick and easy fried rice with day-old rice and whatever you have in your fridge. This recipe is made in 15 minutes flat and is a perfect weeknight meal or quick lunch.
01
Heat oil in a large pot. Add jalapeño peppers, cabbage, and mushrooms to the hot oil. Sauté until veggies are cooked.
02
Add minced garlic and ginger paste and sauté for 30 seconds until fragrant.
03
Whisk eggs and pour into the middle of the pan. Cook for 1 to 2 minutes.
04
Add the day-old rice to the pan and stir well so the egg sticks to the rice as it cooks.
05
Add soy sauce, sesame oil, a pinch of turmeric, salt and black pepper and mix well to combine.
06
Add any frozen vegetables, and mix in well. After a minute, take off heat, add remaining soy sauce and combine well.
