With tender spaghetti squash, creamy ricotta and mozzarella, and savory mushrooms and spinach, this dish has become a household favorite!

Cut spaghetti squash in half, scoop out seeds, and season with salt and pepper. Microwave for 7-12 minutes.

Heat olive oil in a skillet. Cook onion and garlic for 2-3 minutes.

Add mushrooms and cook until tender and browned.

Add spinach to the skillet and cook for 2-3 minutes Season then remove from heat.

In a bowl, combine cooked spaghetti squash strands, ricotta cheese and half of the mozzarella cheese.

Spread half of the spaghetti squash mixture into a baking dish. Layer the mushroom and spinach mixture on top.

Spread the remaining spaghetti squash mixture over the cooked veggies. Sprinkle mozzarella cheese on top.

Bake for 20-25 minutes. Remove foil and bake until top is borwn. Garnish and serve.
- Let the mushrooms sit without stirring for a few minutes at the beginning of sautéing. - Allow the casserole to rest for a few minutes after baking.
