Spaghetti Squash Lasagna

It has tender, well-cooked spaghetti squash, strategically layered with rich ricotta and mozzarella, and topped with aromatic herbs, all ready in just 45 minutes.

What you Need

Cut the spaghetti squash


Cut the squash in half lengthwise and scoop out the seeds. Season with salt and pepper lightly.

Scrape the squash


Place both halves in a microwave-safe dish. Microwave for 7-12 minutes.Cool, then scrape the squash into strands.

Make ricotta mixture


In a mixing bowl, combine cheeses, dried basil, dried oregano, salt, and pepper. Mix well.

Assemble lasagna 


In a baking dish, layer spaghetti squash strands and the ricotta mixture.

Add marinara sauce


Pour half of the marinara sauce evenly over the cheese layer. Repeat the layering process.



Top with cheese, cover with foil then bake for 25 to 30 minutes.

Garnish and serve


Remove the foil and bake for an additional 10-15 minutes. Cool and garnish then serve.
