Squash Casserole with Stuffing


Squash casserole with stuffing is a delicious, comforting dish. Made with roasted yellow squash, hatch chiles, and condensed mushroom soup, it will please everyone at your table!

What you Need

Saute onion


Bring a pan over medium heat. Add the butter and onion. Cook until translucent.

Add squash


Add the squash cubes to the pan and cook for an extra 2 minutes.

Cook squash


Pour water and cook for a further until squash or fork tender. Add more water if needed.

Prep squash mixture


In a bowl, combine and mix the soup, sour cream, stuffing mix, chiles and the cooked squash mixture.

Bake and serve


Pour the mixture into the baking dish. Top with cheese and bake for 25-30 minutes. Serve and enjoy!
