Pierce potato with a fork and bake for 40-50 minutes. Allow the potatoes to cool slightly.

Scoop out sweet potato flesh carefully, leaving a thin layer of sweet potato inside, and add flesh to a medium bowl.

In a skillet over medium heat, add olive oil and saute the spinach with garlic for about 2 minutes. Reserve.

Mash the sweet potato flesh with sour cream, salt, and pepper until smooth and creamy.

Add black beans and spinach and gently mix.

Remove the skins and mushrooms from the oven. Fill each potato skin with mashed sweet potato, mushrooms and cheese.

Bake until the cheese is melted. Remove from the oven and serve with chopped parsley.
