Jollof Rice

Super easy recipe

The life of the party and ready in 30 minutes!

Ingredients

– Red bell peppers – Roma tomatoes – Habanero peppers – Vegetable oil – Tomato paste – Bouillon cubes – Basmati rice – Vegetable stock

Step 1

Blend tomatoes, red peppers, onion and habanero peppers in a blender until you get a smooth puree.

Step 2

Use a deep and wide pan with a tight-fitting lid. Add  ⅓ cup of vegetable oil. Add finely sliced onions and fry for 2 min.

Step 3

Then, add bay leaves and thyme and sauté for a minute. Now, add the tomato base, bouillon and tomato paste and fry the sauce.

Step 4

Add vegetable stock, cover, and bring to a boil. Add washed and drained rice, mix with the sauce, and lower heat to a low-medium.

Step 5

Cover with the tight-fitting lid and cook covered for 12 min. Check how the rice is cooked. Cook for another 2 to 4 minutes to finish cooking the rice.

Step 6

Take the pot off the heat, and stir up the crispy rice at the bottom to the top. Add a few more slices of onion and serve hot!
