Vegan Shepherd's Pie

Warm, cozy, and comforting are the words that come to mind when I think of this vegan shepherd's pie. It'll make you feel warm and cozy from the inside out, so it's perfect for chilly days.

What you Need

Saute vegetables


Heat skillet over medium heat and add the vegetables and seasonings.

Cook rest ingredients


Add brandy/wine, reduce 1 min. Add tomato puree, Worcestershire, balsamic, mushrooms, lentils, tomatoes, broth. Simmer.

Bring to a boil


Boil, then simmer covered for 20+ mins until lentils are cooked and sauce thickens. Add water/stock if needed

Prep baking dish


Preheat oven to 320ºF. Fill 8x8 dish, top with mashed potato, spread, fork for wavy pattern. Bake.



Bake 20 mins until browned. Rest 5 mins, then serve with peas if desired.
