Vegan Shepherd's Pie is made with lentils, mushrooms and a creamy vegan mashed potato topping - hearty vegan main ready in an hour!

Add olive oil in a heated pot, followed by the vegetables, and Italian seasoning. Cook, until vegetables are softened.

Add wine, and reduce. Add tomato puree, Worcestershire sauce, and balsamic vinegar.

Cook for another minute. Add chopped mushrooms, red lentils, diced tomatoes, and vegetable broth.

Bring to a boil, then reduce the heat to low. Simmer for 20 minutes.

Transfer the filling to a baking dish and top with dollop spoonfuls of mashed potato, spread with a silicone spatula.

Bake for 20 minutes. Remove from the oven and let it sit for 5 minutes before carving. Serve with peas, if desired.
