This vegan mixed vegetable korma has potatoes and peas, and when served with flatbreads with roti or poori, can be a perfect candidate for a quick weeknight dinner!

Add peeled potatoes to a pot of water with turmeric. Boil for about 20 minutes. Drain, mash, and set aside.

Add spices and tomatoes to a food processor and pulse into a smooth paste.

Heat some oil in a medium pot. Add onions and saute until fragrant.

Add sauce to the sautéed onions. Add mashed potatoes and coconut cream, salt, and water. Simmer. Add peas.

Garnish with chopped cilantro and serve hot!
