Aloo Gobi Masala

Aloo gobi (literally translates to "potato + cauliflower") is one of my favorite "dry" Indian curries. It is as minimal effort as you can get for maximum flavor and nutrition!

What you Need

Prep veggies


Spread out all prepared vegetables on a baking sheet with foil. Drizzle with oil and season then toss.

Roast and serve


Roast for 40-45 minutes until golden brown. Garnish with fresh cilantro and serve hot!

- Ensure that the potatoes and cauliflower florets are cooked through but not overcooked. - Allow the cooked aloo gobi masala to sit for a few minutes after cooking.
