Beat butter and sugar until soft and creamy. Add egg and vanilla. In another bowl, whisk together all the dry ingredients. Slowly add to the creamed butter-sugar mix.
Split dough into two parts, cover and refrigerate for at least 5 hours. Use Christmas themed cookie cutters to cut the dough, then bake at 350°F for about 8 minutes.
Combine powdered sugar with egg whites. add lemon juice and mix until firm peaks are formed. Separate into small bowls and add 1 drop of coloring to each bowl, mix well.
Place icing in a piping bag or squeeze bottle and decorate the cookies as you desire. Allow the icing to dry completely, a minimum of 3 hours.
Store in the fridge for 3-4 days or freeze for up to 3 months. But let's be real, who can resist the temptation of Christmas sugar cookies for that long?!
