Potato Salad

The perfect side dish for summer BBQs!


– Potatoes – Eggs – Green onions – Pickles – Mayonnaise – White wine vinegar – Dijon mustard

Step 1

Peel potatoes and then chop them into quarters. Add the potatoes and eggs to a pot filled with salted water and turn up the heat.

Step 2

Turn down the heat slightly to allow a rolling boil. Cook for 15-18 minutes or until potatoes are fork-tender.

Step 3

Place remaining ingredients in a large mixing bowl and mix until well combined.

Step 4

When potatoes are cooked, strain them and allow to cool, along with the eggs. Peel the eggs and roughly chop into quarters.

Step 5

Once the potatoes and eggs are completely cooled, add them to the bowl with the remaining ingredients.

Step 6

Gently toss to combine all the ingredients and garnish with paprika and parsley.

These are usually gone before I know it!
