Blanch spinach in a pot of hot water, drain the water and set aside.

In a cast iron skillet melt butter on medium heat. Sauté onions until they are fully sweated.

Add heavy cream and stir to combine. Add Dijon mustard, garlic powder and red pepper flakes. Simmer.

Add the cheeses and whisk to create a thick gooey cheese sauce.

Squeeze excess water out of the spinach and then add to the cheese sauce. Mix!
