Cut croissants in half lengthwise. Place in a single layer in a prepared baking dish.
Whisk eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix in heavy cream and milk until it's a smooth custardy mixture.
Pour half the custard over the croissants. Make a second layer with remaining croissants and pour the remaining custard. Cover with aluminum foil.
Allow croissants to soak up the custard for at least 30 minutes in the fridge. Then bake for about 45-50 minutes.
Top with maple syrup, berries or toppings of choice before serving. ENJOY!
