Tortellini Pasta Salad

Simple, easy and comes together in 20 minutes!


– Tortellini – Artichoke hearts – Cherry tomatoes – Lemon juice – Parmesan – Pesto – Olive oil

Step 1

Cook the tortellini to 2 minutes under package directions. Drain them and rinse under cold water to stop cooking. Set aside.

Step 2

Add basil pesto into a mason jar along with olive oil, lemon juice, and black pepper. Whisk with a fork for a dressing-like consistency.

Step 3

Slice your cherry tomatoes into halves. Drain 1 can of artichoke hearts and set aside.

Step 4

In a large mixing bowl, add your cooked tortellini, cherry tomatoes, basil, and artichoke hearts. Refrigerate until ready to serve.

Step 5

Before serving, add pesto vinaigrette to the mixing bowl and give it a good toss so it coats the salad evenly.

Step 6

Sprinkle grated parmesan on top and serve!
