Nothing beats these quick and easy air fryer samosas! These crispy, air fryer golden samosas are a healthier and easier way to enjoy this classic Indian snack as a party food or appetizer.

Quarter the potatoes. Add to boiling water. Cook for 20-25 minutes.

Add flour, salt, and oil to a bowl and mix.

Slowly add water and knead into a ball. Dab with little oil and set aside for 15-20 minutes.

Once boiled, drain water from the potatoes, remove the peels and mash.

In a skillet, heat cooking oil. Add cumin seeds and black mustard seeds. Then add ginger, garlic and green chili peppers.

Add mashed potatoes, and other spices. Stir and cook for 2-3 minutes.

Add amchur powder, garam masala, and peas and stir. Turn off the heat, and add cilantro. Set aside.

Take the kneaded dough and roll it out into a long cylinder, roughly as long as your two hands side-to-side.

Portion this cylinder into 8-9 smaller pieces. Roll one piece into a ball. Dust with flour and shape.

Slice this dough diagonally. Lay it on your left hand so the straight edge lines up against the left side of your hand.

Add filling per samosa and push it in so it evenly fills out. Add little water and seal.

Coat samosas with cooking oil. Cook in the air-fryer for 10 to 12 minutes.
- To ensure even cooking, avoid overcrowding the air fryer basket and place samosas in a single layer. - After removing the samosas from the air fryer, let them cool for a few minutes before serving.
