This easy and delicious corn casserole with cream cheese is the perfect side dish for any potluck. It can be made with fresh, frozen or canned corn, and is creamy, cheesy, and full of flavor!

In a large saucepan, combine cream cheese, butter, and milk. Stir mixture until it melts and becomes smooth.

Take pan off the heat. Add corn, cheeses, hatch green chiles, salt, and pepper. Stir everything.

Spread the cream cheese mixture evenly into the prepared baking dish. Top with Parmesan cheese.

Cover with foil and bake it for 20 minutes. Remove foil and bake for 10 minutes more. Sprinkle fresh chives and serve!
