Penne Pasta Vodka Tomato Paste Red Chili Flakes Heavy Cream Parmesan

Key ingredients

Bring a large pot of salted water to a boil and cook the pasta. Save half a cup of pasta water. In a large skillet, sauté shallot until aromatic (2-3 minutes). Then, add garlic and sauté for about 30 seconds.


Add tomato paste and vodka and allow to simmer for at least 7 to 10 minutes to cook the alcohol off (vodka is totally optional).

Add red chili flakes and heavy cream. Stir to combine and cook for 2 to 3 minutes. Add lemon juice, salt and pepper and adjust to taste!

Add pasta along with some pasta water. Top with vegan parmesan and fresh, chopped up basil. Serve hot and ENJOY!
