Key Ingredients

Blend tomatoes, peppers and onion in a blender until you get a smooth puree. This is the base of the Jollof rice.


Fry diced onion and bay leaves for 2-3 minutes. Add pepper sauce, seasoning, and stock and bring to a boil.

Add washed and drained rice. Cover and simmer for 10 minutes. Stir so the rice doesn't stick and cook for another 2-4 minutes.

Turn up the heat if you want the bottom to be crispy.  Add more slices of onion. Serve hot and enjoy!
