This Italian chopped salad recipe is my go-to for a quick and healthy lunch or dinner. It is packed with fresh vegetables and a zesty champagne vinaigrette which makes it a light yet flavorful dish.

In a bowl, combine lettuce, endive, red onion, cherry tomatoes, cucumber, pepperoncini, red peppers, olives and parsley.

In a bowl, whisk together the champagne vinegar, Dijon mustard, and honey.

Slowly drizzle in the olive oil while whisking the mixture continuously until the vinaigrette is emulsified and well combined.

Sprinkle parmesan cheese and basil over the top of the salad. Add more protein to make it more filling.
