To make the base pepper sauce, blend tomatoes, peppers, and onion to form a smooth puree.


Saute onion and bay leaves. Add pepper sauce, seasoning, and stock and bring to a boil. Mix in rice and lower heat.

Cover pot and simmer for 10 minutes, stir the rice so it doesn't stick. Cook for another 2-4 minutes.

If you want the bottom to be crispy, turn up the heat and cook for 1 minute. Stir, add onion and serve hot! ENJOY!
