Flour | Baking Powder | Onion Salt Garlic Powder | Salt | Eggs Instant Polenta | Greek Yogurt Scallions | Jalapeno | Cheddar Cotija Cheese | Lemon Juice

Key Ingredients

Mix flour, baking powder, baking soda, onion salt and garlic powder together. Chop polenta into small cubes, and add that, eggs, Greek yogurt, and oil. Mix well.


Fold scallions, jalapenos and cheddar into the batter. Coat a heated skillet evenly with some oil. Pour batter into the skillet.

Place jalapenos evenly in a circle, add cheddar and cotija cheese on top, and add a squeeze of lemon juice. Bake at 375F for 40 minutes.

Wait for 10 minutes and serve hot (or if you're like me and can't wait, dig right in!) Enjoy!
