This easy and delicious vegetable lasagna is meatless and is made with layers of pasta, ricotta cheese, and roasted vegetables. It's a great way to get your daily dose of vegetables!

Heat oil in a pot. Add the vegetables and salt to the pot. Cook for about 8 to 12 minutes.

Add the garlic, cook for a minute. Add spinach and continue cooking until the spinach wilts.

Add the tomatoes, red pepper flakes, salt and pepper. Simmer covered for 20 minutes. Remove from heat.

Add tomato mixture to the bottom of baking dish. Place lasagna noodles.

Spread creamy ricotta over the sauce layer, followed by the mozzarella.

Repeat the layering process and continue layering until you reach the top layer.

Spread the remaining sauce over the top layer. Add the remaining cheese.

Bake in the oven for 20 to 30 minutes. Top with basil, and allow to set up for about 10 minutes before cutting into slices.
