Tortellini Cherry Tomatoes Artichoke Hearts Basil Pesto Parmesan

Key ingredients

Bring water to a rolling boil, and cook the tortellini to 2 minutes less than package directions. Once they rise to the top, drain, rinse and set aside.


To make the vinaigrette, add lemon juice, olive oil and pesto to a small mason jar or bowl. Season and whisk well with a fork.

Mix cooked tortellini with cherry tomatoes, basil, and artichoke hearts. Before serving, add pesto vinaigrette, toss to coat.

Sprinkle grated parmesan on top and serve! ENJOY!
