This one-pot vegan cabbage soup is delicious, packed with nutrients and flavor, and can be made in large batches, making it ideal as a weeknight dinner!

Chop up onion, carrots and celery stalk into even pieces.

Heat oil in a large pot. Add onion, carrots, and celery and cook until soft, about 5 to 6 minutes.

Add garlic and cook for 30 seconds. Add tomato paste, red pepper flakes, thyme, and oregano and cook for 2 minutes.

Add cabbage and diced tomatoes and cook for a minute. Add vegetable broth, then season, and cook for 15 minutes.

Add the cannellini beans, and cook for an additional 10 minutes.

Turn off the heat, adjust the seasoning as needed, and garnish with chopped cilantro.
