Oil | Mustard Seeds | Ginger Cumin Seeds | Ground Coriander Turmeric | Mixed Vegetables Mung Dal | Rice | Salt | Cilantro
Wash rice and dal separately at least 2-3 times to get rid of dirt and excess starch.
Heat oil over medium heat, add mustard seeds, cumin seeds, and coriander, stirring occasionally, until fragrant. Add ginger and turmeric and cook for about 15-20 seconds.
Add mixed vegetables of your choice and sauté quickly. Then, add the rice and dal along with water and a pinch of salt. Bring all of this to a boil.
Then, reduce the heat, cover and simmer for roughly 30 minutes. Check to observe the consistency - you ideally want a porridge like texture.
Adjust salt to your taste (if needed), and garnish with fresh cilantro. Serve hot!
