Tortellini Cherry Tomatoes Artichoke Hearts Pesto Parmesan

Key ingredients

Bring a pot of salted water to a boil. Cook the tortellini 2 minutes less than the package directions indicate. Set aside.


Add lemon juice and olive oil to pesto in a small mason jar. Add a pinch of salt and pepper and whisk well.

Add cherry tomatoes, basil, and artichoke hearts to tortellini, and mix well. Optional: chill in the fridge for 30 minutes.

Add pesto vinaigrette. Sprinkle grated parmesan on top and serve! ENJOY!
