Instructions
Preheat the oven to 425°F and spread the tater tots on a large baking sheet in a single layer.
Bake according to package instructions (usually 25-30 minutes) or until crispy and golden, flipping halfway through.
Once the tater tots are crispy, remove them from the oven and transfer to an oven-safe dish or leave them on the baking sheet.
Sprinkle the black beans, corn, red onion, and jalapeño evenly over the tater tots.
Top with shredded cheddar and Monterey Jack cheeses.
Return the tater tots to the oven and bake for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.
Remove the tater tots from the oven and immediately top with pico de gallo, diced avocado, and fresh cilantro.
Sprinkle with black olives, if desired, and drizzle with sour cream or Greek yogurt.
Serve warm with lime wedges on the side for an extra burst of flavor.
Notes
B
ake the tater tots longer for extra crispiness before adding toppings.
Swap or add toppings like diced bell peppers, pickled jalapeños, or crumbled feta.
Add a drizzle of your favorite hot sauce or sprinkle on some red pepper flakes.
Add scrambled eggs for a breakfast twist or seasoned vegetarian taco meat for extra heartiness.
