To make tater tot nachos, you’ll need tater tots, black beans, pico de Gallo, corn kernels, red onions, jalapeño slices, avocado slices, black olives, Monterey jack cheese, cheddar cheese, sour cream for drizzling and lime wedges for serving.

Variations & Substitutions
- Tater tots. I like using extra crispy tater tots. For a twist, try sweet potato tots or cauliflower veggie tots.
- Black beans. You can use kidney beans or pinto beans, or try using refried black beans for a creamier texture.
- Salsa. Use fresh salsa or pico de Gallo. For a sweeter version, use mango salsa and if you want a spicy kick, you can use use habanero salsa. You can use fresh tomato slices in a pinch.
- Shredded cheese. You can also use a Mexican cheese blend.
- Sour cream. Substitute with Greek yogurt. You can also use cilantro lime sauce, jalapeno ranch dressing, or a melted cheese sauce for drizzling.
- Make it spicy. Pickled jalapeños, a drizzle of hot sauce, or even a sprinkle of cayenne on the cheese takes this up a notch.
- Add protein. Add scrambled eggs, crumbled vegetarian taco meat, seasoned tempeh, black beans with extra spices, or even some crispy tofu crumbles to add more protein and turn this into a full-on meal.
Make vegan totchos
Substitute cheddar and Monterey jack with vegan cheese. For sour cream, you can use cashew cream or vegan yogurt.

Get those tots extra crispy. Bake them a few minutes longer than the package says before adding toppings—nobody wants a soggy tot.
- While layering, go for cheese first, then toppings, then more cheese. This helps everything stick together and avoids a pile of loose toppings.
- Go easy on the salsa. Too much liquid = sad, mushy tots. Serve extra on the side instead.

Step 1:
Preheat the oven to 425°F and spread the tater tots on a large baking sheet in a single layer. Bake according to package instructions (usually 25-30 minutes) or until crispy and golden, flipping halfway through.
Once the tater tots are crispy, remove them from the oven and transfer to an oven-safe dish or leave them on the baking sheet.

Sprinkle the black beans, corn, red onion, and jalapeño evenly over the tater tots.

Step 3:
