My tofu scramble comes out fluffy and golden instead of wet, because the crumbled tofu cooks dry in the skillet before any liquid goes back in. Kala namak, the black salt I grew up with, goes in off the heat and gives it the eggy flavor. One block of tofu, one pan, 15 minutes, and it’s vegan and gluten free.

The black salt that makes vegan scrambled eggs taste like eggs

Kala namak was on our table growing up. It’s the salt in chaat masala, the one you shake over cut fruit and chaat, and it smells faintly of eggs because of the sulfur in it. The first time I tasted a scramble made without it, I understood why people call this dish bland. The salt is the difference between crumbled tofu and something that reads as eggs.
Two things make this version work. The tofu cooks in the pan until it stops steaming and starts to color, which drives off the water that makes most scrambles soggy, and only then does a splash of plant milk go back in to soften it. And the kala namak goes in at the end, off the heat. Cooked too long, its flavor fades to nothing; added at the end, a quarter teaspoon is enough to make it taste like eggs.

The best tofu for scramble, and the two seasonings that matter

- Firm or extra-firm tofu is the only kind to use here, the same block I buy for marinated tofu. Soft or silken turns to paste the moment you stir it. You don’t need to press it; patting the block dry with a towel and letting it cook off its water in the pan does the job.
- Kala namak (black salt) is the eggy flavor. Buy it at any Indian grocery or online; it’s pinkish gray in the jar and smells stronger than it tastes. Add it off the heat and start with less, since it is saltier than it looks.
- Nutritional yeast adds the savory, slightly cheesy depth. Two tablespoons is enough; more and the scramble tastes like a dusting of nooch instead of eggs.
- Ground turmeric is for color, not flavor. Half a teaspoon turns the block golden without tasting bitter; a full teaspoon does.
- Unsweetened plant milk loosens the scramble at the end. Use oat or soy. Sweetened or vanilla milk will ruin it, and water works fine if that’s what you have.

Getting the tofu scramble seasoning and texture right
These are the fixes from the batches that came out wet or tasted like sulfur.
- Crumble by hand and leave some big pieces. Fork-mashed tofu turns into a uniform paste; hand-crumbled curds in a mix of sizes look and eat like scrambled eggs.
- Let it sit in the pan. Stir every minute or so, not constantly. The tofu needs contact with the hot pan to color and dry out, and constant stirring keeps it steaming.
- Kala namak goes in off the heat. Heat dulls it fast. Stir it in after the pan comes off the burner, taste, and add the second pinch only if you want it eggier.
- Doubling for four: use a 12-inch skillet or cook in two batches. A crowded pan steams the tofu and you’re back to wet scramble.
How to make tofu scramble
- Pat the tofu dry and crumble it by hand into a bowl, leaving some larger curds.
- Cook the onion in olive oil over medium heat until soft, then add the tofu and cook, stirring now and then, until it stops steaming and starts to turn golden at the edges.
- Sprinkle in the nutritional yeast, turmeric, cumin, and pepper and stir until the tofu is evenly golden.



- Add the plant milk and cook another minute until soft and fluffy. Take the pan off the heat.
- Stir in the kala namak, taste, add more if you want it eggier, and finish with chives.


How to serve tofu scramble
On a weekday this is a tofu breakfast on its own: a pile of scramble on buttered toast with sliced avocado and a squeeze of lemon, which is how it’s photographed here. For a bigger plate, spoon it next to a sweet potato breakfast hash, or use it as the filling in a breakfast quesadilla with a handful of cheese if you’re not keeping it vegan. Half a block per person with toast and avocado is a full breakfast, not a side.

For a mixed table, make the scramble and let the egg eaters have eggs. My cottage cheese eggs cook in the same amount of time, and the two look close enough on the plate that nobody feels like they got the substitute. Kids tend to like it better on a tortilla with cheese than on toast, and a little ketchup does not hurt anything.
Variations
- Stir a handful of baby spinach, diced tomato, or bell pepper in with the onion for a tofu scramble with veggies. Cook the vegetables until any liquid is gone before the tofu goes in.
- For a tofu scramble without nutritional yeast, add an extra pinch of kala namak and a teaspoon of white miso whisked into the plant milk.
- Silken tofu scramble is a different dish: softer, closer to soft-scrambled eggs, and it needs a gentler hand and no browning step. Use firm for this recipe.
- For heat, a pinch of red pepper flakes with the spices, or hot sauce at the table so the kids’ plates stay mild.
Storage and reheating
Leftovers keep in an airtight container in the fridge for 4 days. Reheat in a skillet over medium with a splash of plant milk, or in the microwave in 30-second bursts, then taste; it usually wants another small pinch of kala namak after reheating. It does not freeze well. The texture turns spongy.

- 1 (14-oz) block firm or extra-firm tofu, drained and patted dry
- 1 tablespoon olive oil
- ¼ cup finely diced yellow onion (about half a small onion)
- 2 tablespoons nutritional yeast
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cumin
- ¼ teaspoon ground black pepper
- 3 tablespoons unsweetened plant milk or water
- ½ teaspoon kala namak (black salt), divided
- 2 tablespoons fresh chives or scallions, chopped
Instructions
- Pat the tofu dry with a clean towel and crumble it by hand into a bowl, leaving some larger curds. Don’t mash it fine.
- Heat the olive oil in a 10-inch skillet over medium heat. Add the onion and cook 2 to 3 minutes, until soft.
- Add the crumbled tofu and cook, stirring every minute or so, 4 to 5 minutes, until it stops steaming and the edges start to turn golden.
