My tofu taco meat is extra-firm tofu crumbled by hand and browned in one skillet until the edges crisp, then tossed with tomato paste, soy sauce, and homemade taco seasoning. It takes about 35 minutes including pressing the tofu, and the batch freezes for up to 2 months for tacos, burritos, and bowls later.

Why crumbled tofu is my weeknight taco filling

Shruthi's face

This filling is a weeknight staple at my house. It’s crumbled, browned, and seasoned the way a classic ground taco filling is, with about 15 minutes of actual cooking, and it goes into tacos, burritos, bowls, or nachos.

Getting the crumbles crisp comes down to order. The tofu goes into the hot pan plain and cooks until the pan is dry and the edges brown, 6 to 8 minutes. Only then do the soy sauce and tomato paste go in, and the spices go last with a splash of water so they coat every piece instead of scorching on the pan. Season it wet and early, and you get soft tofu in spice paste.

Same weeknight lane as my tofu fajitas with peppers and onions and the rest of my vegetarian Mexican recipes.

Homemade taco seasoning and the right tofu

Ingredients for crispy tofu tacos.

Full ingredient list and detailed instructions in the recipe card.

  • Extra-firm tofu is the only block I use here. Firm tofu holds more water and breaks down into mush before it browns. One full 14-ounce block feeds four.
  • Homemade taco seasoning takes two minutes from chili powder, cumin, smoked paprika, garlic and onion powder, and oregano, and it lets me keep the salt low since the soy sauce brings plenty. A store-bought blend works too; use 2 tablespoons in place of the homemade mix.
  • Smoked paprika gives the filling its smoky edge without any heat, which keeps it mild enough for kids. The heat goes on at the table.
  • Low-sodium soy sauce or tamari is the savory backbone. Tamari keeps the filling gluten-free.
  • Tomato paste in a tube is the one to buy. The recipe needs a single tablespoon, and the tube keeps for weeks in the fridge instead of leaving you with most of a can.

Shruthi’s Top Tips

Getting tofu crumbles crisp, not steamed

Crisp crumbles come down to water and space.

  • Press the tofu for at least 15 minutes. Water left in the block steams the crumbles instead of browning them.
  • Crumble by hand into uneven pieces. Mixed sizes give you crisp bits and tender bits, while a fork mash turns pasty.
  • Use your largest skillet and stir only now and then. A crowded pan or constant stirring keeps the tofu pale.
  • For extra crunch, spread the finished filling on a baking sheet and broil it for 5 minutes.

How to make tofu taco meat

  1. Stir the taco seasoning together in a small bowl.
  2. Crumble the pressed tofu by hand into small, uneven pieces.
  3. Brown the tofu in oil over medium-high heat, stirring now and then, until the pan is dry and the edges turn golden, 6 to 8 minutes.

  2. Add the seasoning and a splash of water, then toss for 2 to 3 minutes until every piece is coated and the pan is dry again.
  3. Taste, adjust the salt and chili powder, and spoon it into tacos, burritos, or bowls.

How to serve tofu taco meat

For tacos, I fill warm corn tortillas with the crumbles and pile on shredded cabbage, salsa, cilantro, and a squeeze of lime. To round out the plate, add a scoop of dairy-free refried beans and a side of Mexican street corn salad. The tofu and beans together carry the protein.

For kids, keep the filling mild and let the grown-ups add heat with fiery habanero salsa or hot sauce. The filling holds in the skillet over low heat, so it works for a taco night where everyone builds their own.

Variations

  • Stir in extra chili powder at the end for a spicier filling.
  • Spoon it into burritos, over rice bowls, or onto loaded tater tot nachos.

Storage and reheating

The recipe doubles easily for the freezer. Cool it completely, then freeze it flat in a zip-top bag for up to 2 months so you can break off just what you need. Reheat it straight from frozen in a dry skillet over medium heat, stirring, until hot and the edges crisp again, 5 to 7 minutes. The fridge holds it for 4 days.

Equipment

  • large skillet
  • Baking sheet (optional, for broiling)

Ingredients

For the taco seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon kosher salt

For the tofu

  • 1 block extra-firm tofu, 14-ounce, drained and pressed for 15 minutes
  • 2 tablespoons olive oil
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon tomato paste, from a tube
  • 2 tablespoons water

Instructions

  • Stir the taco seasoning ingredients together in a small bowl and set aside, or use 2 tablespoons of a store-bought blend.
  • Crumble the pressed tofu with your hands into small, uneven pieces. Aim for a mix of sizes, not a fine mash.
  • Heat the oil in a large skillet over medium-high heat. Add the tofu and cook, stirring occasionally, 6 to 8 minutes, until the moisture cooks off and the edges start to brown.
  • Stir in the soy sauce and tomato paste and cook for 1 minute, until the paste darkens.
  • Add the taco seasoning and toss to coat. Add the water to help the spices cling, then cook 2 to 3 minutes more, until the tofu is well browned and the pan is dry.
  • Taste and adjust the salt and chili powder. Serve in tacos, burritos, bowls, or over nachos.

Notes

  • Press the tofu for at least 15 minutes for the best browning.
  • For extra-crisp crumbles, spread the cooked filling on a baking sheet and broil for 5 minutes.
  • Make a bigger batch of the taco seasoning and keep it in a jar for next time.
  • Refrigerate for up to 4 days, or freeze flat in a zip-top bag for up to 2 months. Reheat from frozen in a dry skillet over medium heat, 5 to 7 minutes.
